So Easy Stores acquired its first grocery store in Episkopi area, Limassol. In addition, two more stores opened for the first time in Nicosia ending with a total of 16 outlets by the end of 2005.  

The Express bakery concept idea is introduced to the majority of the So Easy Stores.

A new type of stores is launched named "Snack Express", mainly located in Industrial Areas that offer a variety of snacks, take- away meals and ready to eat food at fair prices.

The chain expanded in the districts of Paralimni and Larnaca ending with a total of 10 outlets by the end of 2002.

So Easy Stores opens its first convenience store in Limassol, Cyprus. So Easy Stores was the first convenience store to offer freshly baked bakery products by an “Express” business concept idea.
